Zucchini Bread

 

Zucchini Bread

Whisk together:

3 eggs
2 Cups granulated sugar
1 Cup vegetable oil
2 Cups grated raw zucchini
2 tsp. vanilla

Stir into above until well blended:

3 Cups flour
1 tsp. salt
1 tsp. baking soda
¼ tsp. baking powder
3 tsp. cinnamon
1 Cup chopped nuts

Bake in two well-greased 9" x 5" x 3" pans in oven preheated to 350° for approximately one hour.
